In Japanese cutlery there are knives made specifically for food fabrication. Honesukis are traditionally intended for Poultry.
These Honesuki Hybrids make it more of a utility knife, an all purpose blade for virtually anything and quick precision cuts where you don't need to go to a larger blade and just get the job done.
Most paring knives have a problem with height, with added heel height this outclasses paring knives because your knuckles will never hit the cutting board.

My choice stainless steel cryogenically hardened so it sharpens like high carbon and has a very long lasting edge.

Every Majime knife is meticulously made by hand with simple tools and impeccable
attention to detail. No knife is the same as they are intended to be unique to their
owner.
